Rinse the basmati rice under cold water until the water runs clear.
In a pot, bring 2 cups of water to a boil.
Add the rinsed rice to the boiling water and a pinch of salt.
Cover and simmer on low heat for about 15 minutes or until the rice is cooked.
In a separate pan, heat 1 tablespoon of oil over medium heat.
Add mustard seeds and let them splutter.
Add urad dal and sauté until golden brown.
Stir in chopped green chilies and peanuts, cooking for another 2 minutes.
Add turmeric powder and mix well.
Once the rice is cooked, fluff it with a fork and add it to the pan.
Pour the lemon juice over the rice and mix thoroughly.
Garnish with fresh coriander before serving.
