Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 2 green chilies chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 cup peanuts
  • Salt to taste
  • Juice of 1 lemon
  • Fresh coriander for garnish

Instructions

  • Rinse the basmati rice under cold water until the water runs clear.
  • In a pot, bring 2 cups of water to a boil.
  • Add the rinsed rice to the boiling water and a pinch of salt.
  • Cover and simmer on low heat for about 15 minutes or until the rice is cooked.
  • In a separate pan, heat 1 tablespoon of oil over medium heat.
  • Add mustard seeds and let them splutter.
  • Add urad dal and sauté until golden brown.
  • Stir in chopped green chilies and peanuts, cooking for another 2 minutes.
  • Add turmeric powder and mix well.
  • Once the rice is cooked, fluff it with a fork and add it to the pan.
  • Pour the lemon juice over the rice and mix thoroughly.
  • Garnish with fresh coriander before serving.
