Wash and peel the potatoes.

Drain the potatoes and let them cool slightly.
In a large bowl, mix together the sour cream, mayonnaise, mustard, salt, and pepper.
Add the cooled potatoes to the bowl and gently stir to coat.
Fold in the shredded cheese, crumbled bacon, and chopped green onions.
Taste and adjust seasoning if necessary.
Chill in the refrigerator for at least 1 hour before serving.
