Preheat your oven to 400°F (200°C).
In a bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
In another bowl, beat the eggs.
Dip each chicken breast into the beaten eggs, coating thoroughly.
Transfer the chicken to the breadcrumb mixture, pressing gently to ensure an even coating.
Place the coated chicken breasts on a baking sheet lined with parchment paper.
Drizzle olive oil over the top of each chicken breast.
Bake for 25-30 minutes, or until the chicken is golden brown and cooked through.
Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
Garnish with chopped fresh parsley before serving.
