Gradually add granulated sugar while continuing to beat until stiff peaks form.
Fold in the almond flour mixture gently.
Add vanilla extract and food coloring, if desired.
Transfer the mixture to a piping bag fitted with a round tip.
Pipe small circles onto a baking sheet lined with parchment paper.
Tap the baking sheet on the counter to remove air bubbles.
Let the macarons sit at room temperature for 30-60 minutes before baking.
Bake for 15-20 minutes, then let cool completely.
Assemble with your choice of filling.
