Ingredients

  • 2 ripe mangoes peeled and diced
  • 1 red bell pepper thinly sliced
  • 1 cucumber diced
  • 1 red onion thinly sliced
  • 2 cups mixed greens
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: sliced avocado for garnish

Instructions

  • Wash all the vegetables and greens thoroughly.
  • Peel the mangoes and cut them into small cubes.
  • Slice the red bell pepper into thin strips.
  • Dice the cucumber into bite-sized pieces.
  • Thinly slice the red onion.
  • In a large bowl, combine the diced mangoes, bell pepper, cucumber, and onion.
  • Add the mixed greens to the bowl.
  • In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh cilantro and optional avocado slices before serving.
