Ingredients

  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper chopped
  • 1/2 red onion thinly sliced
  • 1 cup canned chickpeas drained and rinsed
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Feta cheese optional

Instructions

  • Gather all ingredients and tools needed for preparation.
  • Wash and dry the cherry tomatoes, cucumber, bell pepper, and parsley.
  • Halve the cherry tomatoes and place them in a mixing bowl.
  • Dice the cucumber and add it to the bowl with tomatoes.
  • Chop the bell pepper and add it to the mixture.
  • Thinly slice the red onion and incorporate it into the salad.
  • Add the rinsed chickpeas to the bowl for added protein.
  • Finely chop the fresh parsley and add it to the mixture.
  • In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • If desired, crumble feta cheese on top before serving.
