Preheat your oven to 200°F (93°C).
Line a baking sheet with parchment paper.
In a clean bowl, beat the egg whites until soft peaks form.
Add cream of tartar and continue beating while gradually adding sugar.
Beat until stiff peaks form and mixture is glossy.
Mix in vanilla extract and desired food coloring.
Spoon or pipe the meringue onto the prepared baking sheet.
Bake for about 90 minutes until dry and crisp.
Turn off the oven and let meringues cool completely.
