Ingredients

  • 2 cups corn fresh or canned
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened cream cheese and sour cream until smooth.
  • Add the corn, diced tomatoes, and chopped green onions to the bowl.
  • Sprinkle in the chili powder, cumin, salt, and pepper. Mix well to combine.
  • Fold in the shredded cheddar cheese, reserving a small amount for topping.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with the reserved cheddar cheese.
  • Bake in the preheated oven for 20 minutes or until bubbly and golden.
  • Remove from the oven and let it cool slightly.
  • Serve warm with tortilla chips or fresh veggies.
