Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheese cheddar or pepper jack
  • 1 can 4 oz diced green chilies
  • 1/4 cup chopped fresh cilantro

Instructions

  • Preheat your oven to 400°F (200°C) and grease a baking pan.
  • In a large bowl, mix the cornmeal, flour, baking powder, and salt.
  • In another bowl, whisk together the milk, oil, and eggs.
  • Combine the wet ingredients with the dry ingredients until just mixed.
  • Fold in the cheese, green chilies, and cilantro.
  • Pour the batter into the prepared baking pan.
  • Bake in the preheated oven for 30-35 minutes, or until golden brown.
  • Check for doneness by inserting a toothpick; it should come out clean.
  • Let the cornbread cool in the pan for about 10 minutes.
  • Slice and serve warm with your favorite toppings.
