Ingredients

  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans or walnuts
  • 1/4 teaspoon salt
  • Additional powdered sugar for rolling

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Add in the vanilla extract and mix until well combined.
  • In another bowl, whisk together the flour and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Fold in the chopped pecans or walnuts, ensuring they are evenly distributed.
  • Shape the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with the palm of your hand.
  • Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  • Remove from the oven and let them cool on the baking sheet for a few minutes.
  • While still warm, roll cookies in powdered sugar and set aside to cool completely.
  • Once cooled, roll them in powdered sugar again for a beautiful finish.
