Ingredients

  • 1 cup rolled oats
  • 1 cup milk or non-dairy alternative
  • 1 ripe banana
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  • In a blender, combine rolled oats and milk; blend until smooth.
  • Add the ripe banana, egg, baking powder, vanilla extract, honey, and salt; blend until well mixed.
  • Let the batter sit for 5 minutes to thicken.
  • Preheat a non-stick skillet over medium heat and add a little butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip and cook for another 2-3 minutes until golden brown.
  • Repeat with remaining batter, adding more butter or oil as needed.
  • Serve warm with your favorite toppings.
