Ingredients

  • 1 kg baby potatoes
  • 100 g grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the baby potatoes thoroughly and dry them.
  • In a large bowl, combine olive oil, minced garlic, thyme, salt, and pepper.
  • Add the potatoes to the bowl and toss until evenly coated.
  • Place the potatoes on a baking sheet lined with parchment paper.
  • Roast in the oven for 20 minutes.
  • Remove the baking sheet and sprinkle grated Parmesan cheese over the potatoes.
  • Return to the oven and roast for an additional 10 minutes, or until golden brown.
  • Once done, remove from the oven and let them cool slightly.
  • Garnish with fresh parsley before serving.
