Preheat your oven to 400°F (200°C).
Wash the baby potatoes thoroughly and dry them.
In a large bowl, combine olive oil, minced garlic, thyme, salt, and pepper.
Add the potatoes to the bowl and toss until evenly coated.
Place the potatoes on a baking sheet lined with parchment paper.
Roast in the oven for 20 minutes.
Remove the baking sheet and sprinkle grated Parmesan cheese over the potatoes.
Return to the oven and roast for an additional 10 minutes, or until golden brown.
Once done, remove from the oven and let them cool slightly.
Garnish with fresh parsley before serving.
