Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 6-8 tablespoons ice water
  • 4 cups fruit filling apples, cherries, or berries
  • 1/2 cup sugar for filling
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix flour, sugar, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the ice water, a tablespoon at a time, until the dough forms.
  • Divide the dough in half, shape into discs, and refrigerate for at least 30 minutes.
  • Roll out one disc and fit it into a pie dish.
  • Mix the fruit filling with sugar, lemon juice, and cinnamon, and pour into the crust.
  • Roll out the second disc and place it over the filling; cut slits for steam to escape.
  • Bake for 45 minutes or until the crust is golden brown.
  • Cool the pie before slicing and serving.
