Ingredients

  • 1 can 20 oz crushed pineapple, drained
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter melted
  • 1 cup crushed Ritz crackers
  • 1 egg beaten
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the drained crushed pineapple with sugar and flour.
  • Add the beaten egg and vanilla extract, stirring until well combined.
  • Fold in the shredded cheddar cheese.
  • Pour the mixture into a greased 9x13-inch baking dish.
  • In a separate bowl, mix the crushed Ritz crackers with melted butter.
  • Spread the cracker mixture evenly over the pineapple mixture.
  • Bake in the preheated oven for 30 minutes or until golden brown.
  • Remove from oven and let cool for a few minutes before serving.
  • Garnish with fresh mint leaves if desired.
