Preheat your oven to 425°F (220°C).
In a bowl, mix minced garlic, olive oil, paprika, cumin, oregano, salt, pepper, and lime juice to create a marinade.
Pat the chicken dry with paper towels.
Rub the marinade all over the chicken, including under the skin.
Place the chicken in a roasting pan, breast side up.
Add chopped vegetables around the chicken.
Roast in the preheated oven for about 1 hour and 15 minutes.
Check the internal temperature (should reach 165°F/75°C).
Let the chicken rest for 10 minutes before carving.
Garnish with fresh cilantro and serve.
