Ingredients

  • 1 whole chicken about 3-4 lbs
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Juice of 2 limes
  • Fresh cilantro for garnish
  • Assorted vegetables carrots, bell peppers, onions

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix minced garlic, olive oil, paprika, cumin, oregano, salt, pepper, and lime juice to create a marinade.
  • Pat the chicken dry with paper towels.
  • Rub the marinade all over the chicken, including under the skin.
  • Place the chicken in a roasting pan, breast side up.
  • Add chopped vegetables around the chicken.
  • Roast in the preheated oven for about 1 hour and 15 minutes.
  • Check the internal temperature (should reach 165°F/75°C).
  • Let the chicken rest for 10 minutes before carving.
  • Garnish with fresh cilantro and serve.
