Ingredients

  • 1 3-4 lb pork loin
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon thyme chopped
  • 1 lemon sliced
  • 1 cup chicken broth
  • Vegetables for roasting, optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pat the pork loin dry with paper towels.
  • Rub the olive oil all over the pork loin.
  • Season generously with salt, pepper, garlic, rosemary, and thyme.
  • Place the pork loin in a roasting pan.
  • Arrange lemon slices on top and around the pork.
  • Pour chicken broth into the bottom of the pan.
  • Roast in the preheated oven for about 1 hour.
  • Check the internal temperature; it should reach 145°F (63°C).
  • Let the pork rest for 10-15 minutes before slicing.
