Preheat your oven to 375°F (190°C).
Pat the pork loin dry with paper towels.
Rub the olive oil all over the pork loin.
Season generously with salt, pepper, garlic, rosemary, and thyme.
Place the pork loin in a roasting pan.
Arrange lemon slices on top and around the pork.
Pour chicken broth into the bottom of the pan.
Roast in the preheated oven for about 1 hour.
Check the internal temperature; it should reach 145°F (63°C).
Let the pork rest for 10-15 minutes before slicing.
