Ingredients

  • 3-4 pounds of pork shoulder or loin
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 cup chicken broth
  • 1 onion quartered
  • 2 carrots chopped
  • 2 apples quartered

Instructions

  • Preheat your oven to 325°F (165°C).
  • Pat the pork roast dry with paper towels.
  • In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  • Rub this mixture all over the pork roast.
  • Place the pork in a roasting pan, fat side up.
  • Add onions, carrots, and apples around the pork.
  • Pour chicken broth into the pan.
  • Roast in the oven for about 3 hours.
  • Baste the pork every hour with the pan juices.
  • Let the roast rest for 15 minutes before slicing.
