Preheat your oven to 325°F (165°C).
Pat the pork roast dry with paper towels.
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
Rub this mixture all over the pork roast.
Place the pork in a roasting pan, fat side up.
Add onions, carrots, and apples around the pork.
Pour chicken broth into the pan.
Roast in the oven for about 3 hours.
Baste the pork every hour with the pan juices.
Let the roast rest for 15 minutes before slicing.
