Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the pork tenderloin dry with paper towels.
  • In a small bowl, mix olive oil, garlic, salt, pepper, paprika, thyme, Dijon mustard, and honey.
  • Rub the mixture all over the pork tenderloin.
  • Heat a skillet over medium-high heat and sear the pork for 3-4 minutes on each side until browned.
  • Transfer the skillet to the preheated oven.
  • Roast for 20-25 minutes until the internal temperature reaches 145°F (63°C).
  • Remove from the oven and let it rest for 5-10 minutes.
  • Slice the tenderloin into medallions.
  • Garnish with fresh herbs before serving.
