Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels.
In a small bowl, mix olive oil, garlic, salt, pepper, paprika, thyme, Dijon mustard, and honey.
Rub the mixture all over the pork tenderloin.
Heat a skillet over medium-high heat and sear the pork for 3-4 minutes on each side until browned.
Transfer the skillet to the preheated oven.
Roast for 20-25 minutes until the internal temperature reaches 145°F (63°C).
Remove from the oven and let it rest for 5-10 minutes.
Slice the tenderloin into medallions.
Garnish with fresh herbs before serving.
