Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly.
Poke holes in each potato with a fork.
Rub the potatoes with olive oil and season with salt.
Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
Remove potatoes and let them cool slightly.
Cut each potato in half lengthwise and scoop out some flesh, leaving a thin layer.
Brush the insides with olive oil and season with salt and pepper.
Bake the potato halves again for 10-15 minutes until crispy.
Fill each skin with cheese and bacon, then return to the oven for 5 minutes until cheese melts.
Top with sour cream and green onions before serving.
