Preheat your oven to 400°F (200°C).
Scrub the potatoes clean and prick them with a fork.
Bake the potatoes for 45 minutes until tender.
Let them cool slightly, then cut in half and scoop out some flesh.
Brush the insides and outsides with olive oil, and season with salt and pepper.
Place skins on a baking sheet and bake for another 10 minutes until crispy.
Fill each skin with shredded cheese and crumbled bacon.
Bake for 5-7 minutes until the cheese is melted.
Remove from oven and top with sour cream and green onions.
Serve immediately and enjoy!
