Ingredients

  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked bacon crumbled
  • 2 green onions sliced
  • Olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes thoroughly.
  • Poke holes in each potato with a fork.
  • Rub the potatoes with olive oil and season with salt.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  • Remove potatoes and let them cool slightly.
  • Cut each potato in half lengthwise and scoop out some flesh, leaving a thin layer.
  • Brush the insides with olive oil and season with salt and pepper.
  • Bake the potato halves again for 10-15 minutes until crispy.
  • Fill each skin with cheese and bacon, then return to the oven for 5 minutes until cheese melts.
  • Top with sour cream and green onions before serving.
