Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions

Instructions

  • Preheat your oven to 400°F (200°C).
  • Scrub the potatoes clean and prick them with a fork.
  • Bake the potatoes for 45 minutes until tender.
  • Let them cool slightly, then cut in half and scoop out some flesh.
  • Brush the insides and outsides with olive oil, and season with salt and pepper.
  • Place skins on a baking sheet and bake for another 10 minutes until crispy.
  • Fill each skin with shredded cheese and crumbled bacon.
  • Bake for 5-7 minutes until the cheese is melted.
  • Remove from oven and top with sour cream and green onions.
  • Serve immediately and enjoy!
