In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
Add flour and salt to the mixture, stirring until combined.
Knead the dough on a floured surface for about 5 minutes until smooth.
Place the dough in a greased bowl, cover it, and let it rise for 30 minutes.
Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
In a pot, bring 8 cups of water and baking soda to a boil.
Divide the risen dough into small pieces and roll each into a ball.
Boil each dough ball in the baking soda solution for about 30 seconds.
Remove and place them on the prepared baking sheet.
Brush with melted butter and sprinkle with coarse sea salt. Bake for 10-15 minutes until golden brown.
