Season the roast beef generously with salt and pepper.
Heat a skillet over medium-high heat and sear the beef on all sides until browned.
Transfer the beef to a roasting pan.
Add garlic, rosemary, and thyme around the beef.
Roast in the oven for 20 minutes.
Reduce the temperature to 325°F (163°C) and continue roasting for about 1 hour.
Use a meat thermometer to check for doneness (135°F for medium-rare).
Remove the roast from the oven and let it rest for 15 minutes.
Slice against the grain and serve with gravy.
