Ingredients

  • 3-4 lbs beef roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

Instructions

  • Preheat your oven to 450°F (232°C).
  • Season the roast beef generously with salt and pepper.
  • Heat a skillet over medium-high heat and sear the beef on all sides until browned.
  • Transfer the beef to a roasting pan.
  • Add garlic, rosemary, and thyme around the beef.
  • Roast in the oven for 20 minutes.
  • Reduce the temperature to 325°F (163°C) and continue roasting for about 1 hour.
  • Use a meat thermometer to check for doneness (135°F for medium-rare).
  • Remove the roast from the oven and let it rest for 15 minutes.
  • Slice against the grain and serve with gravy.
