Ingredients

  • 1 zucchini sliced
  • 1 yellow bell pepper diced
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes
  • 1 eggplant cubed
  • 1 cup baby carrots
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and prepare all vegetables by cutting them into even pieces.
  • In a large bowl, combine the vegetables.
  • Drizzle olive oil over the vegetables.
  • Add salt, pepper, and dried oregano.
  • Toss the vegetables until they are evenly coated.
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast in the oven for 30-35 minutes, stirring halfway through.
  • Check for tenderness and caramelization.
  • Remove from the oven and let cool slightly before serving.
