Ingredients

  • 4 medium zucchini
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese optional
  • Fresh basil leaves for garnish
  • Cherry tomatoes for garnish

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash the zucchini thoroughly under cold water.
  • Slice the zucchini in half lengthwise.
  • Place the zucchini halves on a baking sheet, cut side up.
  • Drizzle olive oil over the zucchini.
  • Sprinkle garlic powder, salt, pepper, and Italian seasoning evenly.
  • Use a brush to spread the oil and seasonings evenly.
  • If desired, sprinkle Parmesan cheese on top of the zucchini.
  • Bake in the oven for about 20 minutes, or until tender and lightly browned.
  • Garnish with fresh basil and cherry tomatoes before serving.
