Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 1 red bell pepper diced
  • 1 onion chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Season the chicken breasts with salt, pepper, and garlic powder.
  • Place the chicken at the bottom of the crockpot.
  • Pour salsa over the chicken evenly.
  • Add the black beans and corn on top.
  • Sprinkle taco seasoning over the mixture.
  • Add diced red bell pepper and chopped onion.
  • Cover the crockpot with the lid.
  • Set to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks.
  • Stir the mixture to combine all ingredients and serve hot.
