Preheat your oven to 400°F (200°C).
In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
Spread the potatoes on a baking sheet in a single layer.
Place the sausages on top of the potatoes.
Bake in the preheated oven for 20-25 minutes.
Stir the mixture halfway through cooking for even browning.
Check that the sausages are cooked through (internal temperature should be 165°F or 75°C).
Once done, remove from the oven and let it cool for a few minutes.
Garnish with fresh herbs before serving.
