Ingredients

  • 4 chicken thighs or breasts
  • 2 cups baby potatoes halved
  • 2 cups carrots sliced
  • 1 red bell pepper chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare a large baking sheet by lining it with parchment paper.
  • In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  • Coat the chicken pieces with the oil mixture.
  • Place the chicken on the baking sheet.
  • Add the halved baby potatoes and sliced carrots around the chicken.
  • Toss the vegetables in the remaining oil mixture.
  • Roast in the preheated oven for 25 minutes.
  • Add chopped red bell pepper and cook for an additional 15 minutes.
  • Ensure the chicken is cooked through (internal temperature of 165°F) before serving.
