Ingredients

  • 1 pound fresh shrimp peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup diced red onion
  • 1 cup diced cucumber
  • 1 cup diced bell pepper red or green
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Avocado slices for serving
  • Tortilla chips for serving

Instructions

  • Boil a pot of water and add the shrimp. Cook for 2-3 minutes until they turn pink.
  • Remove shrimp from boiling water and place them in an ice bath to stop cooking.
  • Once cooled, chop the shrimp into bite-sized pieces.
  • In a large bowl, combine the chopped shrimp with fresh lime juice.
  • Add diced red onion, cucumber, and bell pepper to the bowl.
  • Stir in chopped cilantro for a fresh flavor.
  • Season with salt and pepper to taste.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  • Before serving, adjust seasoning if necessary.
  • Serve chilled with avocado slices and tortilla chips on the side.
