Boil a pot of water and add the shrimp. Cook for 2-3 minutes until they turn pink.
Remove shrimp from boiling water and place them in an ice bath to stop cooking.
Once cooled, chop the shrimp into bite-sized pieces.
In a large bowl, combine the chopped shrimp with fresh lime juice.
Add diced red onion, cucumber, and bell pepper to the bowl.
Stir in chopped cilantro for a fresh flavor.
Season with salt and pepper to taste.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
Before serving, adjust seasoning if necessary.
Serve chilled with avocado slices and tortilla chips on the side.
