Ingredients

  • 1 pound cooked shrimp peeled and deveined
  • 2 cups mixed greens spinach, arugula, etc.
  • 1 ripe avocado sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Rinse the cooked shrimp under cold water to cool.
  • In a large mixing bowl, combine the mixed greens.
  • Add the cooled shrimp to the bowl.
  • Slice the avocado and gently add to the salad.
  • Halve the cherry tomatoes and add to the bowl.
  • Thinly slice the red onion and sprinkle over the salad.
  • In a small bowl, whisk together olive oil and lemon juice.
  • Drizzle the dressing over the salad and toss gently.
  • Season with salt, pepper, and garnish with fresh herbs.
  • Serve immediately.
