Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup fideo noodles vermicelli
  • 4 cups chicken or vegetable broth
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Heat the oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in the minced garlic and cook for 1 minute.
  • Add the fideo noodles and toast them until golden brown.
  • Mix in the diced tomato, cumin, and chili powder.
  • Pour in the broth and bring the mixture to a boil.

  • Remove from heat and let it rest for a few minutes.
