Ingredients

  • 500 g bread flour
  • 350 g water
  • 100 g active sourdough starter
  • 10 g salt
  • 15 g sugar optional
  • 30 g unsalted butter optional

Instructions

  • In a large bowl, combine the bread flour and water. Mix until a shaggy dough forms.
  • Add the active sourdough starter and mix until incorporated.
  • Let the dough rest for 30 minutes (autolyse).
  • Add salt and sugar, then knead until smooth and elastic.
  • Place the dough in a greased bowl and cover it.
  • Allow it to rise at room temperature for 3-4 hours, folding every hour.
  • Shape the dough into a loaf and place it in a greased loaf pan.
  • Cover and let it rise for another 1-2 hours until doubled in size.
  • Preheat the oven to 375°F (190°C).
  • Bake for 30-35 minutes until golden brown and hollow sounding.
