Ingredients

  • 2 grilled chicken breasts sliced
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn cooked
  • 1 can black beans rinsed and drained
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • Juice of 2 limes
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  • Preheat your grill to medium-high heat.
  • Season the chicken breasts with salt, pepper, and cumin.
  • Grill the chicken for about 6-7 minutes on each side until fully cooked.
  • Remove chicken from the grill and let it rest for a few minutes.
  • Chop the romaine lettuce and place it in a large bowl.
  • Add the halved cherry tomatoes, cooked corn, and rinsed black beans to the bowl.
  • Slice the grilled chicken and add it on top of the salad.
  • Prepare the dressing by whisking together lime juice, olive oil, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve the salad topped with avocado slices and chopped cilantro.
