Ingredients

  • 1 whole chicken about 4-5 lbs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 lemon halved
  • Fresh herbs thyme, rosemary, or parsley

Instructions

  • Preheat your oven to 450°F (230°C).
  • Place the chicken breast-side down on a cutting board.
  • Using kitchen shears, cut along both sides of the backbone to remove it.
  • Flip the chicken over and press down on the breastbone to flatten it.
  • Pat the chicken dry with paper towels.
  • Rub olive oil all over the chicken, ensuring it's well-coated.
  • Season generously with salt, pepper, garlic powder, and paprika.
  • Squeeze lemon juice over the chicken and place the halves inside the cavity.
  • Place the chicken on a baking sheet or roasting pan.
  • Roast in the oven for 45-50 minutes, or until the skin is golden and the internal temperature reaches 165°F (75°C).
