Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1 cup canned artichoke hearts drained and chopped
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt, pepper, and garlic powder.
  • Sear the chicken in the skillet for about 5 minutes on each side until golden.
  • In a bowl, mix cream cheese, sour cream, Parmesan, spinach, and artichokes.
  • Place seared chicken in a baking dish.
  • Spread the spinach-artichoke mixture over each chicken breast.
  • Bake in the oven for 20 minutes or until the chicken is cooked through.
  • Remove from the oven and let it rest for a few minutes.
  • Garnish with fresh parsley before serving.
