Ingredients

  • 1 cup split peas rinsed
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion, carrots, and celery; sauté for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for another minute.
  • Add the rinsed split peas, broth, bay leaf, and thyme to the pot.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Cover and let it simmer for about 45 minutes, stirring occasionally.
  • Remove the bay leaf and season with salt and pepper to taste.
  • If desired, use an immersion blender for a smoother texture.
