Soak the vermicelli noodles in hot water for about 10 minutes until soft, then drain.
Prepare all the fillings by slicing vegetables and herbs into thin strips.
Fill a shallow dish with warm water and dip one rice paper wrapper for about 5 seconds until soft.
Lay the softened wrapper on a clean surface.
Add a small amount of noodles and arrange your choice of fillings in the center.
Fold the sides of the wrapper over the fillings.
Roll the wrapper away from you, tucking it tightly as you go.
Repeat the process for the remaining wrappers and fillings.
Serve with your choice of dipping sauce.
