Prepare all vegetables by washing and slicing them into thin strips.
Soak the rice paper wrappers in warm water for about 10 seconds until pliable.
Lay a soaked wrapper on a clean surface or cutting board.
Place a lettuce leaf in the center of the wrapper.
Add a small amount of each vegetable and protein on top of the lettuce.
Sprinkle fresh herbs over the filling.
Fold the sides of the wrapper over the filling.
Roll the wrapper tightly from the bottom up, sealing the filling inside.
Repeat with remaining wrappers and filling ingredients.
Serve immediately with your choice of dipping sauce.
