Ingredients

  • Rice paper wrappers
  • 1 cup of vermicelli noodles
  • 1 cup of mixed greens lettuce, spinach
  • 1/2 cup of shredded carrots
  • 1/2 cup of sliced cucumbers
  • 1/2 avocado sliced
  • Fresh herbs mint, cilantro
  • Sliced bell peppers
  • Peanut or hoisin sauce for dipping

Instructions

  • Soak the vermicelli noodles in hot water for about 10 minutes until soft, then drain.
  • Prepare all the fillings by slicing vegetables and herbs into thin strips.
  • Fill a shallow dish with warm water and dip one rice paper wrapper for about 5 seconds until soft.
  • Lay the softened wrapper on a clean surface.
  • Add a small amount of noodles and arrange your choice of fillings in the center.
  • Fold the sides of the wrapper over the fillings.
  • Roll the wrapper away from you, tucking it tightly as you go.
  • Repeat the process for the remaining wrappers and fillings.
  • Serve with your choice of dipping sauce.
  • Enjoy your fresh spring rolls!
