Ingredients

  • Rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup bell peppers thinly sliced
  • 1 cup lettuce leaves
  • 1/2 cup fresh herbs mint, cilantro
  • Protein of choice shrimp, chicken, or tofu
  • Dipping sauce sweet chili or peanut sauce

Instructions

  • Prepare all vegetables by washing and slicing them into thin strips.
  • Soak the rice paper wrappers in warm water for about 10 seconds until pliable.
  • Lay a soaked wrapper on a clean surface or cutting board.
  • Place a lettuce leaf in the center of the wrapper.
  • Add a small amount of each vegetable and protein on top of the lettuce.
  • Sprinkle fresh herbs over the filling.
  • Fold the sides of the wrapper over the filling.
  • Roll the wrapper tightly from the bottom up, sealing the filling inside.
  • Repeat with remaining wrappers and filling ingredients.
  • Serve immediately with your choice of dipping sauce.
