Preheat your oven to 325°F (160°C).
In a blender, combine the eggs, cottage cheese, salt, and pepper.
Blend until smooth and creamy.
Grease a muffin tin or use silicone molds.
Pour the egg mixture evenly into the molds, filling them about 3/4 full.
Add your choice of veggies or toppings on top of each bite.
Place the muffin tin in a larger baking dish and fill the dish with water to create a water bath.
Bake in the preheated oven for 25 minutes or until set.
Let the egg bites cool for a few minutes before removing them from the molds.
Serve warm and enjoy!
