Gather all your ingredients and prep them by slicing and measuring.
Heat sesame oil in a large wok or skillet over medium-high heat.
Add minced garlic and ginger; sauté for 30 seconds until fragrant.
Add the sliced chicken (or tofu) and cook until browned, about 5 minutes.
Stir in the bell peppers and broccoli; cook for 2-3 minutes.
Add snap peas and continue to stir-fry for another 2 minutes.
Pour in the soy sauce and mix well to coat the ingredients.
Cook for an additional 1-2 minutes until everything is heated through.
Remove from heat and sprinkle with chopped green onions and sesame seeds.
Serve hot over rice or noodles.
