Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice or quinoa
  • 1 can diced tomatoes 14 oz
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese optional

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds.
  • In a skillet, heat some oil over medium heat and sauté the chopped onion until translucent.
  • Add minced garlic and ground meat, cooking until browned.
  • Stir in cooked rice, diced tomatoes, paprika, Italian seasoning, salt, and pepper.
  • Fill each pepper with the meat and rice mixture.
  • Place the stuffed peppers upright in a baking dish.
  • Sprinkle shredded cheese on top (if using).
  • Pour a little water into the bottom of the dish to keep the peppers moist.
  • Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes.
