Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly.
Pierce each sweet potato several times with a fork.
Rub the sweet potatoes with olive oil, salt, and pepper.
Place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 45 minutes, or until tender.
Remove from the oven and let them cool slightly.
Cut each sweet potato in half lengthwise.
Fill the well with Greek yogurt, sprinkle with smoked paprika, and garnish with fresh herbs.
