Ingredients

  • 2 medium sweet potatoes
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly.
  • Pierce each sweet potato several times with a fork.
  • Rub the sweet potatoes with olive oil, salt, and pepper.
  • Place them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 45 minutes, or until tender.
  • Remove from the oven and let them cool slightly.
  • Cut each sweet potato in half lengthwise.
  • Fill the well with Greek yogurt, sprinkle with smoked paprika, and garnish with fresh herbs.
