Ingredients

  • 1 cup cooked rice
  • 1/2 lb ground beef
  • 1/2 can black beans drained
  • 1/2 cup corn
  • 1 medium tomato diced
  • 1/4 cup chopped onion
  • 1 avocado sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup salsa
  • Taco seasoning to taste

Instructions

  • Cook rice according to package instructions.
  • In a skillet, brown the ground beef over medium heat.
  • Drain excess fat from the beef.
  • Add taco seasoning and a splash of water, simmer for 5 minutes.
  • Stir in black beans and corn, heating until warmed through.
  • In a bowl, layer cooked rice as the base.
  • Spoon the beef mixture over the rice.
  • Top with diced tomatoes and chopped onion.
  • Add sliced avocado and shredded lettuce.
  • Drizzle with salsa and serve immediately.
