  • 1 cup cooked rice or quinoa
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned

  • 1 avocado diced

Instructions

  • In a large skillet, brown the ground meat over medium heat until fully cooked.
  • Drain excess fat and return the meat to the skillet.
  • Add taco seasoning and follow package instructions for mixing with water.
  • Simmer for about 5 minutes until thickened.
  • While the meat cooks, prepare the rice or quinoa according to package instructions.
  • In a separate pot, heat black beans and corn until warm.
  • Chop the tomatoes, lettuce, and avocado into bite-sized pieces.
  • Once the meat is ready, assemble the bowls by placing a scoop of rice at the bottom.
  • Top with the seasoned meat, black beans, and corn.
  • Add fresh toppings like tomatoes, lettuce, cheese, and avocado, finishing with a dollop of sour cream and salsa.
