Ingredients

  • 1 lb ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 packet taco seasoning
  • 1 cup corn
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1 cup tortilla chips crushed

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked.
  • Drain excess fat from the skillet.
  • Add taco seasoning, black beans, kidney beans, and corn to the skillet.
  • Stir to combine and let simmer for 5 minutes.
  • In a 9x13 inch baking dish, layer half of the beef mixture.
  • Spread half of the diced tomatoes over the beef layer.
  • Add half of the crushed tortilla chips and half of the cheese.
  • Repeat the layers with the remaining ingredients.
  • Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden.
