Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans drained
  • 1 can corn drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese cheddar or Mexican blend
  • 6 small corn tortillas
  • 1 cup salsa
  • Optional toppings: sour cream green onions, jalapeños

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef or turkey over medium heat.
  • Drain any excess fat and stir in the taco seasoning, black beans, and corn.
  • In a baking dish, spread a layer of salsa on the bottom.
  • Place 2 tortillas over the salsa, overlapping slightly.
  • Spread half of the meat mixture over the tortillas.
  • Sprinkle a layer of cheese over the meat.
  • Repeat the layers with the remaining tortillas, meat, salsa, and cheese.
  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until cheese is bubbly.
