Ingredients

  • 2 pounds pork shoulder sliced thinly
  • 1/4 cup pineapple juice
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 2 cloves garlic minced
  • 1/4 cup white vinegar
  • Corn tortillas
  • Fresh pineapple diced
  • Chopped onion
  • Fresh cilantro

Instructions

  • Marinate the pork with pineapple juice, chili powder, cumin, oregano, garlic, and vinegar for at least 2 hours.
  • Preheat the grill or skillet over medium heat.
  • Remove the pork from the marinade and let excess liquid drip off.
  • Grill the pork for about 5-7 minutes per side until cooked through.
  • Allow the pork to rest for 5 minutes before slicing it into smaller pieces.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • Assemble the tacos by placing a generous amount of pork on each tortilla.
  • Top with diced pineapple, chopped onion, and fresh cilantro.
