Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat.
Add chopped onion and sauté until translucent.
Add ground beef and cook until browned, breaking it apart as it cooks.
Drain excess fat and stir in cream of mushroom soup.
Season with garlic powder, salt, and pepper.
If using, stir in frozen mixed vegetables.
Pour the beef mixture into a greased 9x13 inch baking dish.
Layer frozen tater tots evenly on top of the beef mixture.
Sprinkle shredded cheddar cheese over the tater tots.
Bake in the preheated oven for 30-35 minutes or until tater tots are golden brown.
Garnish with fresh parsley before serving.
