Ingredients

  • 1 pre-made pie crust
  • 3 cups fresh tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup fresh basil chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Optional: red pepper flakes for added spice

Instructions

  • Preheat the oven to 375°F (190°C).
  • Roll out the pre-made pie crust and fit it into a 9-inch pie dish.
  • In a bowl, combine the ricotta cheese, garlic, and half of the basil. Mix well.
  • Spread the ricotta mixture evenly over the pie crust.
  • Layer the sliced tomatoes over the ricotta, overlapping them slightly.
  • Sprinkle with mozzarella and Parmesan cheese.
  • Season with salt, pepper, and red pepper flakes if desired.
  • Drizzle with olive oil for added flavor.
  • Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
  • Let it cool for a few minutes before slicing and serving.
