Ingredients

  • 2 cups cooked tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup black olives pitted and sliced
  • 1/4 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  • Cook the tortellini according to package instructions and drain.
  • Rinse the tortellini under cold water to cool it down.
  • In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, cucumber, olives, red onion, and feta cheese.
  • In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad ingredients.
  • Gently toss to combine all ingredients thoroughly.
  • Add chopped basil and mix again.
  • Taste and adjust seasoning if necessary.
  • Cover the salad and refrigerate for at least 30 minutes.
