Ingredients

  • 2 cups chicken or vegetable broth
  • 1 cup tortellini fresh or frozen
  • 1 cup diced tomatoes
  • 1 cup chopped spinach or kale
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in diced carrots and celery, cooking for 5 minutes until softened.
  • Pour in the chicken or vegetable broth and bring to a boil.
  • Add diced tomatoes and bring mixture back to a simmer.
  • Stir in tortellini and cook according to package instructions, about 5-7 minutes.
  • Add chopped spinach or kale and cook until wilted.
  • Season with salt and pepper to taste.
  • Remove from heat and let cool slightly.
  • Serve hot, garnished with fresh basil.
