Heat olive oil in a large pot over medium heat.
Add minced garlic and sauté until fragrant, about 1 minute.
Stir in diced carrots and celery, cooking for 5 minutes until softened.
Pour in the chicken or vegetable broth and bring to a boil.
Add diced tomatoes and bring mixture back to a simmer.
Stir in tortellini and cook according to package instructions, about 5-7 minutes.
Add chopped spinach or kale and cook until wilted.
Season with salt and pepper to taste.
Remove from heat and let cool slightly.
Serve hot, garnished with fresh basil.
