Ingredients

  • 2 medium zucchinis
  • 1 cup ground turkey
  • 1/2 cup diced tomatoes
  • 1/4 cup onion diced
  • 1/4 cup bell pepper diced
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded cheese
  • Fresh herbs for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out the seeds.
  • In a skillet over medium heat, cook the ground turkey until browned.
  • Add diced onions and bell peppers; sauté until softened.
  • Stir in diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  • Fill each zucchini half with the meat mixture.
  • Place the filled zucchinis on a baking sheet.
  • Sprinkle shredded cheese on top of each boat.
  • Bake for 25-30 minutes until zucchinis are tender.
  • Garnish with fresh herbs before serving.
