In a large bowl, combine the grated zucchini, flour, eggs, Parmesan cheese, green onions, and garlic.
Season the mixture with salt and pepper.
Heat oil in a skillet over medium heat.
Form the zucchini mixture into patties and place in the hot oil.
Fry for about 3-4 minutes on each side until golden brown.
Remove fritters and drain on paper towels.
Repeat with remaining mixture.
Serve warm with your favorite dipping sauce.
