Ingredients

  • 2 medium zucchinis grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 clove garlic minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  • Grate the zucchinis and squeeze out excess moisture.
  • In a large bowl, combine the grated zucchini, flour, eggs, Parmesan cheese, green onions, and garlic.
  • Season the mixture with salt and pepper.
  • Heat oil in a skillet over medium heat.
  • Form the zucchini mixture into patties and place in the hot oil.
  • Fry for about 3-4 minutes on each side until golden brown.
  • Remove fritters and drain on paper towels.
  • Repeat with remaining mixture.
  • Serve warm with your favorite dipping sauce.
